Marinate the Steak

In a bowl, combine olive oil, minced garlic, Japanese ginger, orange zest, salt, and pepper. Add the hanger steak and marinate for at least 1 hour or overnight for best results.

Pickle the Fennel

In a small pot, combine sliced fennel, white vinegar, and a pinch of salt. Bring to a simmer and let it cook for about 5 minutes. Remove from heat and let it cool.

Cook the Steak

Heat a grill or skillet over medium-high heat. Remove the steak from the marinade and grill for about 4-5 minutes on each side for medium-rare, or until your desired doneness. Let it rest for 5 minutes before slicing.

Warm the Tortillas

In a dry skillet, warm the corn tortillas for about 30 seconds on each side until pliable.

Assemble the Tacos

Slice the grilled steak thinly. On each tortilla, place a few slices of steak, top with sliced black olives, and a drizzle of fresh orange juice. Serve with pickled fennel on the side.
