Prepare the Corn Tortillas
Make your corn tortillas from scratch or warm store-bought ones.

Cook the Plantains
Peel and slice the plantains into 1/2 inch thick slices. In a frying pan, heat the coconut oil over medium heat. Add the sliced plantains and fry until golden brown on both sides (about 3-4 minutes per side). Remove and drain on paper towels.

Make Black Bean Mole
In a saucepan, combine cooked black beans, tomato sauce, cumin, chili powder, garlic powder, and salt. Simmer for 10 minutes, stirring occasionally until heated through and slightly thickened.
