Prepare the Plantains
Peel the plantains and slice them diagonally into 1-inch thick pieces. Heat 1 tablespoon of avocado oil in a skillet over medium heat. Fry the plantain slices until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels, then sprinkle with salt to taste.

Prepare the Queso
In a mixing bowl, combine the shredded Oaxaca cheese and Monterey Jack cheese. Heat a skillet over medium heat and add the cheese mixture. Stir continuously until the cheese is melted and bubbly, about 5-7 minutes.

Cook the Shishito Peppers
In another skillet, heat the remaining tablespoon of avocado oil over medium heat. Add the shishito peppers and sauté until they are blistered and tender, about 5 minutes. Season with salt.

Assemble the Queso Fundido
Once the cheese is melted, transfer it to a serving dish. Top with the sautéed shishito peppers and serve immediately with fried plantains and warm corn tortillas on the side.
