Make the Poaching Liquid
In a large saucepan, combine water, sugar, candied ginger, cinnamon sticks, orange peel, vanilla bean (split and seeds scraped), and saffron threads. Bring to a gentle simmer over medium heat.

Poach the Pears
Carefully add the peeled organic pears to the simmering poaching liquid. Cover and simmer for about 20-25 minutes, or until the pears are tender but not mushy. Remove from heat and let the pears cool in the poaching liquid.

In a mixing bowl, whisk together heavy cream, powdered sugar, and vanilla extract until soft peaks form.

Place a poached pear on each serving plate, drizzle with some poaching liquid, add a dollop of hand-whipped cream, and grate fresh nutmeg on top before serving.
