Prepare the Tortillas
Heat the cooking oil in a large skillet over medium heat. Cut the corn tortillas into quarters and fry them in the hot oil until they are crispy. Remove and drain on paper towels.

Make the Black Bean Mole
In a separate saucepan, heat the black beans and mole sauce together over low heat until warmed through. Season with salt and pepper to taste.

Assemble the Chilaquiles
On a plate, create a bed of the black bean mole mixture. Place the crispy tortillas on top, followed by the over-easy egg. Crumble organic feta cheese over the top, and drizzle with crema fresca.

Serve immediately with your choice of salsa roja or salsa verde on the side.
