Preparation

  1. 1

    Cook the Hanger Steak

Season the hanger steak with salt and pepper. Heat a skillet over medium-high heat and add a little oil. Pan-sear the steak for about 4-5 minutes on each side for medium-rare. Let it rest for 5 minutes before slicing.

  2. 2

    Make the Florentine Sauce

In a saucepan, melt the butter over medium heat. Add the minced garlic and sauté for 1 minute. Stir in the chopped spinach and cook until wilted. Add the heavy cream and bring to a simmer. Stir in the Parmesan cheese and season with salt and pepper to taste. Remove from heat.

  3. 3

    Prepare the Tortillas

Warm the flour tortillas in a dry skillet or microwave until pliable.

  4. 4

    Assemble the Burrito

Place a flour tortilla on a plate, top with sliced hanger steak, pour the Florentine sauce over the steak, and add slices of avocado and micro-cilantro.
