Panna Cotta Base
Method
Preparation
- 1
Prepare Gelatin
In a small bowl, sprinkle gelatin over 2 tablespoons of cold water and let it sit for about 5 minutes to bloom.
- 2
Heat Cream Mixture
In a saucepan over medium heat, combine heavy cream, whole milk, sugar, Meyer lemon zest, and salt. Stir until the sugar is dissolved and the mixture is steaming, but not boiling.
- 3
Combine Gelatin
Remove the saucepan from heat. Stir in the bloomed gelatin until completely dissolved. Add Meyer lemon juice and vanilla extract, mixing well.
- 4
Pour and Chill
Pour the mixture into individual serving cups or ramekins. Allow to cool at room temperature for 10 minutes, then refrigerate for at least 4 hours until set.
- 5
Serve
Once set, serve chilled. Optionally, you can garnish with additional Meyer lemon zest or fresh berries.
