    Make the Base

    In a medium saucepan, combine the whole milk, heavy cream, and granulated sugar. Heat over medium heat until the mixture is warm and the sugar has dissolved, stirring occasionally.

    Make the Custard

    In a separate bowl, whisk the egg yolks. Slowly pour the warm milk mixture into the egg yolks, whisking constantly to temper the eggs. Then, return the mixture to the saucepan.

    Cook the Custard

    Cook the mixture over medium heat, stirring constantly, until it thickens enough to coat the back of a spoon (about 170°F or 77°C). Do not let it boil.

    Add Flavoring

    Remove from heat and stir in the vanilla extract. Allow the mixture to cool to room temperature.

    Chill the Mixture

    Cover and refrigerate the custard for at least 4 hours or overnight to chill completely.

    Churn the Gelato

    Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

    Freeze the Gelato

    Transfer the gelato to an airtight container and freeze for at least 2 hours before serving.
