Melt the Chocolate
In a heatproof bowl, melt the dark chocolate over a double boiler or in the microwave until smooth. Allow to cool slightly.

Whip the Cream
In a separate bowl, whip the heavy cream until soft peaks form. Be careful not to overwhip.

Beat the Egg Whites
In another bowl, beat the egg whites with granulated sugar until stiff peaks form.

Combine Mixtures
Gently fold the melted chocolate into the whipped cream until well combined. Then, carefully fold in the beaten egg whites until no white streaks remain.

Chill the Mousse
Spoon the mousse into serving dishes and refrigerate for at least 2 hours or until set.

Serve
Before serving, top each mousse with fresh raspberries, chocolate shavings, and a tuille cookie.
