Prepare the Chicken

Pound the chicken breasts to an even thickness. Season with salt, black pepper, and paprika.

Breading Process

In one bowl, combine flour, cornstarch, and seasoning. In another bowl, whisk together buttermilk and egg. Dip each chicken breast in buttermilk, then coat with flour mixture.

Fry the Chicken

Heat oil in a skillet over medium-high heat. Fry each breaded chicken breast for about 4-5 minutes on each side until golden brown. Drain on paper towels.

Make the Roux

In a saucepan, melt butter over medium heat. Whisk in flour and cook for about 2 minutes until golden.

Gradually whisk in milk and bring to a simmer. Stir until thickened. Season with salt and black pepper.

Prepare the Potatoes

Preheat oven to 400°F (200°C). Cut potatoes into quarters and toss with melted butter, salt, and pepper.

Spread potatoes on a baking sheet and roast for 30-35 minutes until golden and crispy.

Cathead Biscuit

Mix Dry Ingredients

In a bowl, mix flour, baking powder, and salt.

Cut in Butter

Cut in cold butter until mixture resembles coarse crumbs.

Add Buttermilk

Stir in buttermilk until just combined. Do not overmix.

Bake the Biscuits

Drop large spoonfuls of dough onto a baking sheet and bake at 425°F (220°C) for 12-15 minutes until golden.
