Casserole Preparation

Cook the Meats

In a large skillet, cook the breakfast sausage over medium heat until browned. Remove and set aside. In the same skillet, cook the bacon until crispy, then chop into pieces.

Prepare the Vegetables

In the same skillet, sauté diced onion and bell peppers until soft and translucent.

Mix the Egg Mixture

In a large mixing bowl, whisk together the eggs, milk, salt, and black pepper. Stir in the cooked sausage, bacon, sautéed vegetables, and gourmet cheese.

Bake the Casserole

Preheat your oven to 350°F (175°C). Grease a casserole dish and pour the egg mixture into it. Bake for 25-30 minutes or until the eggs are set and the top is golden.

Add Toppings

Sprinkle shredded cheese on top of the casserole during the last 5 minutes of baking, allowing it to melt.

Serve

Once baked, let the casserole cool slightly before serving in hot metal bowls. Pair with hot, spicy rancheros sauce, fiesta potatoes, and a choice of biscuit, toast, or English muffin.
