Prepare the Breakfast Potatoes
In a large skillet, heat the olive oil over medium heat. Add the breakfast potatoes and season with salt and black pepper. Cook until golden brown and cooked through, about 15-20 minutes, stirring occasionally.
Cook the Eggs
Prepare the eggs to your liking. For poached eggs, bring a pot of water to a gentle simmer, crack eggs into small bowls, and carefully slide them into the water. Poach for 3-4 minutes. For fried eggs, heat a small amount of oil in a skillet and cook until the whites are set and yolks are to your preference. For scrambled, whisk eggs in a bowl and cook in a skillet until set, stirring frequently.
Assemble the Bowls
Divide the cooked breakfast potatoes among hot cast iron bowls. Top each bowl with the prepared eggs. Add your choice of toppings such as cheese, green onions, diced avocado, and salsa.
