Prepare the Taco Filling

Cook the Ground Beef
In a large skillet, over medium heat, add the ground beef. Cook until browned, breaking it up with a spatula, about 5-7 minutes.

Add Seasoning and Vegetables
Once the beef is browned, drain excess fat. Add taco seasoning, black beans, corn, chopped red onion, diced bell pepper, and minced garlic to the skillet. Stir well to combine.

Simmer the Filling
Reduce heat to low and allow the mixture to simmer for about 10 minutes, stirring occasionally until the vegetables are tender and the flavors meld.
Assemble the Tacos

Prepare Tortillas or Lettuce Wraps
If using gluten-free tortillas, warm them in a dry skillet for about 30 seconds on each side. If using lettuce wraps, wash and dry the lettuce leaves.

Add Taco Filling
Spoon the taco filling evenly onto each tortilla or lettuce leaf.

Top the Tacos
Sprinkle shredded cheese over the filling, then add a dollop of sour cream and a spoonful of salsa on top. Slice the avocado and arrange on the side or on top.

Serve the tacos immediately while warm, garnished with extra salsa or toppings as desired.
