Cooking the Pork

Prepare the Pork
Trim any excess fat from the pork shoulder and cut it into large chunks.

Season the Pork
In a large bowl, combine the salt, black pepper, cumin, oregano, garlic powder, and onion powder. Rub the spice mixture all over the pork chunks.

Slow Cook
Place the seasoned pork in a slow cooker. Add the orange juice, lime juice, and bay leaves. Cover and cook on low for 8 hours or until the pork is tender and easily shredded.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it with two forks. Discard any large pieces of fat and bay leaves.

Warm the Tortillas
In a dry skillet over medium heat, warm the corn tortillas for about 30 seconds on each side until pliable.

Serve immediately with lime wedges on the side for squeezing over the tacos.
