Prepare the Marinade
In a large mixing bowl, combine the pineapple juice, white vinegar, minced garlic, ancho chili powder, cumin, oregano, salt, black pepper, brown sugar, and chopped chipotle peppers. Whisk until well blended.

Marinate the Pork
Cut the pork shoulder into large chunks and add it to the marinade. Ensure that all pieces are well coated. Cover the bowl with plastic wrap and refrigerate for at least 4 hours, or preferably overnight for maximum flavor.
Cooking the Pork

Cook the Pork
Preheat your grill or a large skillet over medium-high heat. Remove the pork from the marinade and shake off excess marinade. Cook the pork for about 6-8 minutes on each side, or until well charred and cooked through.

Rest the Pork
Once cooked, transfer the pork to a cutting board and let it rest for about 10 minutes before slicing. This helps to retain the juices.

Assemble the Tacos
Slice the rested pork into thin strips. On each tortilla, layer a portion of the sliced pork, followed by diced pineapple, chopped cilantro, and finely chopped onion. Squeeze fresh lime juice on top, to taste.

Serve the tacos immediately with lime wedges on the side for extra flavor. Enjoy your Taco al Pastor!
