Smoked Chicken

Smoked Chicken

    Prepare the Chicken

    Rinse the whole chicken under cold water and pat dry with paper towels. Rub the chicken with olive oil, ensuring it is evenly coated.

    Season the Chicken

    In a small bowl, mix together salt, black pepper, garlic powder, paprika, smoked paprika, and cayenne pepper. Rub this seasoning mix all over the chicken, inside and out.

    Prepare the Smoker

    Soak the wood chips in water for at least 30 minutes. Preheat your smoker to 225°F (107°C).

    Smoke the Chicken

    Place the soaked wood chips in the smoker. Put the seasoned chicken on the grill grates and smoke for about 3-4 hours, or until the internal temperature reaches 165°F (74°C).

Mexican Rice

    Sauté Vegetables

    In a medium saucepan, heat a tablespoon of olive oil over medium heat. Add chopped onion and minced garlic, sauté until onion is translucent.

    Cook the Rice

    Add the long grain rice to the saucepan and stir for a few minutes until the rice is slightly toasted. Then, add chicken broth, tomato sauce, salt, and lime juice. Bring to a boil.

    Simmer

    Reduce the heat to low, cover the saucepan, and let it simmer for about 20 minutes, or until the rice is tender and liquid is absorbed. Stir in chopped cilantro before serving.

Borracho or Black Beans

    Sauté Onion and Garlic

    In a saucepan, heat a tablespoon of oil over medium heat. Add chopped onion and minced garlic, and sauté until softened.

    Add Beans

    Add the canned black beans (drained and rinsed) to the saucepan. Stir in cilantro, cumin, and lime juice. Cook for about 10 minutes over medium heat, stirring occasionally.

Alabama White Sauce

    Mix the Sauce

    In a bowl, combine mayonnaise, apple cider vinegar, lemon juice, garlic powder, salt, and black pepper. Whisk until smooth and well combined. Refrigerate until ready to serve.

Pico de Gallo

    Combine Ingredients

    In a bowl, combine diced tomatoes, diced onion, diced jalapeño, chopped cilantro, lime juice, and salt. Mix well and let sit for at least 10 minutes to allow flavors to meld.
