Cook the Steak
In a large skillet over medium-high heat, add the shredded sirloin steak. Season with salt, black pepper, garlic powder, and cumin. Cook for about 10-15 minutes, stirring occasionally until the steak is heated through and slightly crispy.

Prepare Poblano Peppers
Slice the poblano peppers lengthwise and remove the seeds. In a frying pan, add half of the vegetable oil over medium heat. Once hot, add the sliced poblano peppers and fry them until they are crispy, about 5-7 minutes. Remove and let them drain on paper towels.

Warm the Tortillas
In a dry skillet, warm the corn tortillas on medium heat for about 30 seconds on each side until soft and pliable.

Assemble the Tacos
Start with a warmed tortilla, add a portion of the cooked shredded sirloin steak, top with crispy poblano peppers, onion strings, a handful of sharp cheddar cheese, and a spoonful of pico de gallo. Drizzle with queso blanco. Fold the tortilla and enjoy!
