Method

Prepare the Taco Filling

    Marinate the Sirloin

    Place the sirloin steak in a bowl and cover with the Korean BBQ sauce. Make sure the steak is well coated. Allow it to marinate for at least 30 minutes in the refrigerator.

    Grill the Sirloin

    Preheat the grill to medium-high heat. Remove the sirloin from the marinade (discard the marinade) and grill for about 4-5 minutes on each side for medium-rare, or until desired doneness. Let the steak rest for 5 minutes before slicing.

    Slice the Steak

    Thinly slice the grilled sirloin against the grain and set aside.

    Prepare Green Onions

    Chop the green onions into small pieces and set aside for topping the tacos.

Make the Asian Slaw

    Prepare the Vegetables

    Shred the Napa cabbage and grate the carrot. In a large mixing bowl, combine the shredded cabbage, grated carrot, and chopped cilantro.

    In a small bowl, whisk together the rice vinegar, sesame oil, sugar, and salt until well combined.

    Combine Slaw and Dressing

    Pour the dressing over the cabbage mixture and toss until the vegetables are well coated. Let it sit for about 10 minutes to allow the flavors to meld.

Assemble the Tacos

    Warm the Tortillas

    Heat the flour tortillas in a dry skillet over medium heat for about 30 seconds on each side until warm and pliable.

    Place a generous amount of the sliced sirloin on each tortilla, followed by a scoop of the Asian slaw.
