Infused Tequila Preparation

    Infuse the Tequila

    Slice the fresh jalapenos in half lengthwise and remove the seeds if you prefer less heat. Place the jalapeno halves in a clean glass jar and pour 2 cups of tequila over them. Seal the jar and let it sit in a cool, dark place for at least 24 hours, up to 48 hours for a spicier flavor.

House Rocks Mix Preparation

    Prepare the Rocks Mix

    In a mixing bowl, combine 1 cup of fresh lime juice, 1 tablespoon of agave syrup, and 1 tablespoon of simple syrup. Stir well until the syrups are fully incorporated. Adjust sweetness with more agave or simple syrup if desired. Taste and add salt to your preference.

Cocktail Assembly

    Mix the Cocktail

    Fill a cocktail shaker with ice. Strain the infused tequila (discard the jalapenos) into the shaker with the prepared rocks mix. Shake vigorously for about 15 seconds.

    Serve

    Fill a rocks glass with ice and strain the cocktail from the shaker into the glass. Garnish with additional slices of fresh jalapenos if desired. Enjoy your Kickin' Rita!
