    Prepare the Batter

    In a large mixing bowl, whisk together the cornmeal, all-purpose flour, baking powder, sugar, and salt until well combined.

    Add Vegetables and Wet Ingredients

    Stir in the finely chopped onion. In a separate bowl, combine the milk and beaten egg. Gradually mix the wet ingredients into the dry ingredients until just combined. The batter should be thick but not dry.

    Heat the Oil

    In a deep skillet or frying pan, heat vegetable oil over medium heat. You’ll need enough oil to submerge the hush puppies (about 2-3 inches deep).

    Fry the Hush Puppies

    Once the oil is hot (around 350°F or 175°C), use a spoon or a small ice cream scoop to drop tablespoon-sized amounts of batter into the oil. Fry in batches to avoid overcrowding.

    Cook Until Golden Brown

    Fry the hush puppies for about 3-4 minutes on each side or until they are golden brown. Use a slotted spoon to remove them and place them on paper towels to drain excess oil.

    Combine Ingredients

    In a small bowl, combine the mayonnaise, hot sauce, lemon juice, paprika, and garlic powder. Mix well until all ingredients are fully blended.

    Taste and Adjust

    Taste the sauce and adjust the heat level by adding more hot sauce if desired. You can also add more lemon juice for tanginess.

    Serve the spicy dipping sauce alongside the warm hush puppies for dipping.
