Cook the Ground Beef
In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula as it cooks, about 5-7 minutes.

Season the Beef
Once the beef is browned, drain any excess fat. Stir in the taco seasoning and 1/4 cup of water. Reduce heat to low and simmer for about 5 minutes until the seasoning is well incorporated.

Prepare Tortillas
Warm the flour tortillas in a dry skillet or microwave to make them pliable, about 30 seconds per side in the skillet or 10-15 seconds in the microwave.

Assemble the Gringo
Lay the warm tortilla flat on a plate. Spoon a portion of the seasoned ground beef onto the center of the tortilla, add a generous handful of shredded lettuce, sprinkle with cheddar jack cheese, and top with pico de gallo.

Wrap it Up
Fold the sides of the tortilla over the filling, then roll it up from the bottom to create a wrap. Repeat with the remaining tortillas and filling.

Cut the wrapped tortillas in half if desired, and serve immediately with extra pico de gallo or your favorite salsa on the side.
