Grill the chicken
Preheat your grill to medium heat. Season the chicken breasts with salt, pepper, and a drizzle of olive oil. Grill the chicken for about 6-7 minutes on each side or until fully cooked through. Remove from grill and let it rest for 5 minutes before slicing into strips.

Prepare the tortillas
Lay out the flour tortillas on a clean surface. On one half of each tortilla, sprinkle a generous amount of shredded cheddar jack cheese, followed by the grilled chicken strips.

Assemble and cook the quesadillas
Fold the tortillas in half to cover the filling. Heat a large skillet over medium heat and add a tablespoon of olive oil. Once hot, place the folded tortillas in the skillet, cooking for 3-4 minutes on each side or until the tortillas are golden and the cheese has melted. Repeat with all tortillas.

Cut each quesadilla into wedges and serve hot with a side of sour cream, shredded lettuce, and pico de gallo for dipping.
