Method
Preparation of Grouper
- 1
Prepare the Breading
In a shallow bowl, mix the all-purpose flour and cornstarch together. In another bowl, whisk together the eggs and milk until well combined.
- 2
Coat the Grouper
Dip each grouper fillet first into the egg mixture, allowing any excess to drip off, then dredge it in the flour-cornstarch mixture until evenly coated.
Frying the Grouper
- 3
Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
- 4
Fry the Fillets
Carefully place the breaded grouper fillets in the hot oil, cooking for about 3-4 minutes per side or until golden brown and cooked through. Remove and drain on paper towels.
Assembling the Tacos
- 5
Warm the Tortillas
In a separate pan, warm the flour tortillas over medium heat for about 30 seconds on each side until pliable.
- 6
Build the Tacos
Place a fried grouper fillet on each tortilla, then top with shredded lettuce, pico de gallo, and a drizzle of Boom Boom Sauce.
