Preparing the Chicken

Heat the olive oil in a large skillet over medium heat.

Season the chicken breasts with salt, black pepper, garlic powder, onion powder, and cayenne pepper.

Add the seasoned chicken breasts to the skillet and cook for about 6-7 minutes per side, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

Once cooked, remove the chicken from the skillet and let it rest for a few minutes before dicing it into small pieces.
Assembling the Quesadilla

Lay one tortilla flat on a clean surface or cutting board.

Spread a portion of shredded cheddar jack cheese evenly over half of the tortilla.

Add a portion of the diced chicken on top of the cheese.

Top with more cheese and fold the tortilla in half to cover the filling.

Repeat the process with the remaining tortillas and filling ingredients.
Cooking the Quesadilla

Place the assembled quesadilla in the skillet and cook for about 3-4 minutes, or until the bottom is golden brown and the cheese begins to melt.

Carefully flip the quesadilla over and cook the other side for another 3-4 minutes until it’s golden brown and the cheese is fully melted.

Remove the quesadilla from the skillet and let it cool for a minute before slicing into wedges.
Serving
