Prepare the Tortillas
Cut each corn tortilla into triangles to form chips.

Heat the Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Chips
Carefully add the tortilla triangles to the hot oil in batches, frying until golden brown and crispy, about 2-3 minutes per batch. Remove with a slotted spoon and drain on paper towels. Sprinkle with salt while still hot.

Cook the Ground Beef
In a large skillet, cook the ground beef over medium heat until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat.

Add Cream Cheese
Reduce heat to low and add the cream cheese to the skillet with the beef. Stir until melted and combined.

Incorporate Remaining Ingredients
Add the shredded cheddar cheese, diced tomatoes with green chilies, chili powder, garlic powder, onion powder, salt, and black pepper. Stir until the cheese is melted and the mixture is smooth and creamy.

Transfer the queso to a serving bowl and serve warm alongside the homemade chips.
