Prepare the Ingredients
Gather all the ingredients: flour tortillas, cheddar cheese, Monterey Jack cheese, sour cream, shredded lettuce, and pico de gallo.

Grate the Cheese
Using a box grater, grate 1 cup each of cheddar and Monterey Jack cheese.
Cooking

Heat the Pan
Place a non-stick skillet over medium heat and allow it to warm up for about 2 minutes.

Assemble the Quesadilla
Place one tortilla in the skillet. Evenly sprinkle half of the grated cheddar and Monterey Jack cheese on the tortilla. Top with the second tortilla.

Cook the Quesadilla
Cook for about 3-4 minutes or until the bottom tortilla is golden brown and the cheese begins to melt. Carefully flip the quesadilla using a spatula and cook for another 3-4 minutes on the other side.

Remove and Slice
Once cooked, remove the quesadilla from the skillet, let it cool for a minute, then cut into wedges.

Serve the quesadilla wedges on a plate with a side of sour cream, shredded lettuce, and pico de gallo.
