Pork Preparation

Prepare the Pork
Rub the pork shoulder with smoked paprika, garlic powder, onion powder, salt, and black pepper. Ensure the entire surface is coated evenly.

Cook the Pork
Place the seasoned pork shoulder in a smoker or slow cooker. If using a smoker, smoke at 225°F for about 8-10 hours until the internal temperature reaches 195°F. If using a slow cooker, cook on low for 8 hours.

Coleslaw Preparation

Prepare the Coleslaw Mix
In a large bowl, combine the shredded cabbage and carrots.

Make the Dressing
In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and black pepper until smooth.

Combine and Chill
Pour the dressing over the cabbage and carrot mixture. Toss to combine well. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
Taco Assembly

Warm the Tortillas
Heat the flour tortillas in a skillet over medium heat for about 30 seconds on each side or until warmed through.

Place a generous amount of shredded pork on each tortilla. Top with coleslaw.
