Smoked Pork

Flour Tortilla

Method

Smoked Pork

  1. 1

    Prepare the Pork

Rub the pork shoulder with smoked paprika, garlic powder, onion powder, salt, and black pepper. Ensure it's well-coated.

  2. 2

    Smoke the Pork

Place the seasoned pork shoulder in a smoker set to 225°F (107°C). Smoke for about 8 hours, or until the internal temperature reaches 195°F (90°C).

  3. 3

    Rest and Shred

Remove the pork from the smoker and let it rest for 30 minutes. Once rested, shred the pork using two forks.

  4. 4

    Add Liquid

In a pot, combine the shredded pork with apple cider vinegar and water. Mix well and heat over low until warmed through.

Carolina BBQ Sauce

  1. 5

    Combine Ingredients

In a medium saucepan, combine apple cider vinegar, brown sugar, ketchup, mustard, Worcestershire sauce, hot sauce, salt, and black pepper.

  2. 6

    Simmer the Sauce

Bring the mixture to a simmer over medium heat. Reduce heat to low and let simmer for 15-20 minutes, stirring occasionally.

  3. 7

    Mix with Pork

Once the sauce is ready, mix it with the shredded pork in the pot and allow it to absorb the flavors for another 5 minutes.

Coleslaw

  1. 8

    Combine Vegetables

In a large bowl, combine shredded cabbage and carrots.

  2. 9

    Make Dressing

In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and black pepper.

  3. 10

    Mix Slaw

Pour the dressing over the cabbage and carrots. Toss until well combined. Refrigerate for at least 30 minutes before serving.

Flour Tortilla

  1. 11

    Mix Dry Ingredients

In a large bowl, mix together all-purpose flour, baking powder, and salt.

  2. 12

    Add Wet Ingredients

Make a well in the center and add melted butter and water. Mix until a dough forms.

  3. 13

    Knead the Dough

Turn the dough onto a floured surface and knead for about 5 minutes until smooth.

  4. 14

    Roll Out Tortillas

Divide the dough into 8 equal pieces. Roll each piece into a thin circle.

  5. 15

    Cook Tortillas

Heat a skillet over medium-high heat. Cook each tortilla for about 1 minute on each side until lightly browned. Keep warm.
