Method

Fish Preparation

  1. 1

    Season the Grouper

Rub the grouper fillets with olive oil and then coat them evenly with Cajun seasoning. Let them marinate for about 15 minutes.

  2. 2

    Grill the Fish

Preheat the grill to medium-high heat. Grill the seasoned grouper fillets for about 3-4 minutes on each side or until they are cooked through and have a nice char. Remove from grill and let rest.

Slaw Preparation

  1. 3

    Mix the Slaw

In a large bowl, combine jicama, shredded cabbage, grated carrot, chopped cilantro, lime juice, and salt. Toss well to combine and set aside to let flavors meld.

Sauce Preparation

  1. 4

    Make the Island Mayo

In a small bowl, mix together mayonnaise, lime juice, and hot sauce until smooth and well combined.

Assembly

  1. 5

    Assemble the Tacos

Warm the flour tortillas in a dry skillet or microwave. Place a grilled grouper fillet on each tortilla, top with jicama slaw, and drizzle with island mayo. Serve immediately.
