Rub the grouper fillets with olive oil and then coat them evenly with Cajun seasoning. Let them marinate for about 15 minutes.

In a small bowl, mix together mayonnaise, lime juice, and hot sauce until smooth and well combined.

Warm the flour tortillas in a dry skillet or microwave. Place a grilled grouper fillet on each tortilla, top with jicama slaw, and drizzle with island mayo. Serve immediately.
