Method

Preparing the Grouper

    Season the Fish

    Pat the grouper fillets dry with paper towels. Rub the Cajun seasoning evenly over both sides of each fillet.

    Heat the Grill

    Preheat a grill or grill pan over medium-high heat. Add olive oil to the grill grates to prevent sticking.

    Grill the Fish

    Place the seasoned grouper fillets on the grill. Cook for about 3-4 minutes per side, or until the fish is cooked through and has a blackened crust. Remove from the grill and set aside.

Making the Jicama Slaw

    In a large bowl, combine the julienned jicama, shredded carrot, shredded red cabbage, and chopped cilantro.

    Drizzle lime juice over the slaw mixture. Add salt and pepper to taste. Toss everything together until well mixed.

    In a small bowl, combine mayonnaise, hot sauce, and lime juice. Stir until smooth and well incorporated.

Assembling the Taco

    Heat the flour tortillas on the grill for about 30 seconds on each side until warm and pliable.

    On each tortilla, place a grilled grouper fillet, followed by a generous scoop of jicama slaw and a drizzle of island mayo.

    Fold the tortillas in half and serve immediately, garnished with additional lime wedges if desired.
