Pickled Red Onion

Prepare Pickled Red Onion
Slice the red onion thinly and place it in a jar. In a small saucepan, combine apple cider vinegar, sugar, and salt. Bring to a simmer, stirring until the sugar dissolves. Pour the mixture over the onions in the jar. Let it sit for at least 30 minutes before using.
Coleslaw

Make Coleslaw
In a large bowl, shred the green cabbage and grate the carrot. In a separate bowl, mix together mayonnaise, apple cider vinegar, salt, and black pepper. Combine the dressing with the cabbage and carrot, tossing until well mixed. Refrigerate until ready to use.

Cook the Shrimp
In a bowl, toss the shrimp with Cajun seasoning until evenly coated. Heat olive oil in a skillet over medium-high heat. Cook the shrimp for 2-3 minutes on each side until they are blackened or cooked through. Remove from heat.
Boom Boom Sauce

In a bowl, mix mayonnaise, Sriracha, and lime juice until well combined. Adjust the heat level by adding more Sriracha if desired.

Assemble the Baja Shrimp Tacos
Warm the flour tortillas in a skillet or microwave. On each tortilla, layer cooked shrimp, coleslaw, pico de gallo, pickled red onion, and a drizzle of Boom Boom sauce. Serve immediately.
