Tortilla Preparation

Mix Dry Ingredients
In a large bowl, combine the all-purpose flour, baking powder, and salt. Whisk together until evenly mixed.

Add Wet Ingredients
Make a well in the center of the dry ingredients and add the vegetable oil and water. Mix with a fork until the dough begins to come together.

Knead the Dough
Turn the dough out onto a lightly floured surface and knead for about 5 minutes until the dough is smooth and elastic.

Rest the Dough
Cover the dough with a damp cloth or plastic wrap and let it rest for at least 30 minutes.

Divide and Roll Out
After resting, divide the dough into 8 equal portions. Roll each portion into a ball and then flatten into a 12-inch circle using a rolling pin.
Cooking the Tortillas

Cook the Tortillas
Heat a dry skillet or griddle over medium-high heat. Cook each tortilla for about 1-2 minutes on each side, or until lightly browned and cooked through. Keep them warm in a clean towel.

Assemble the Tacos
Place each tortilla on a plate and sprinkle with cheddar jack cheese, followed by a dollop of sour cream, a handful of shredded lettuce, and a scoop of pico de gallo.
