Make the Dough
In a large bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy. Add flour, salt, and olive oil. Knead until smooth, about 10 minutes. Place in a greased bowl, cover, and let rise for 1 hour or until doubled.

Preheat the Oven
Preheat your wood-fired pizza oven to about 700°F (370°C). If you don't have a wood-fired oven, preheat your conventional oven to the highest setting.

Shape the Pizza
Once the dough has risen, punch it down and divide it into 2-4 pieces, depending on the size of pizzas desired. On a floured surface, roll out each piece into a circle about 10-12 inches in diameter.

Assemble the Pizza
Spread a thin layer of tomato sauce over the dough, leaving a border around the edges. Sprinkle mozzarella cheese evenly on top, add fresh basil, and any additional toppings of your choice. Drizzle with olive oil and season with salt and pepper.

Bake the Pizza
Carefully transfer the pizza to the preheated oven. Bake for about 5-8 minutes, or until the crust is golden and the cheese is bubbly and slightly browned. Repeat with remaining dough and toppings.

Serve
Remove the pizza from the oven, let it cool for a minute, slice, and serve hot.
