Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C).

  2. 2

    Prepare Ramekins

Grease four ramekins with butter and dust them with flour. Tap out any excess flour.

Making the Cake Batter

  1. 3

    Melt Butter and Chocolate

In a microwave-safe bowl, combine the unsalted butter and semi-sweet chocolate chips. Microwave in 30-second intervals, stirring in between, until fully melted and smooth.

  2. 4

    Combine Sugar and Eggs

In a separate bowl, whisk together the granulated sugar, large eggs, and large egg yolks until the mixture is thick and pale.

  3. 5

    Mix Ingredients

Add the melted chocolate mixture and vanilla extract to the egg mixture. Stir until well combined.

  4. 6

    Add Flour and Salt

Gently fold in the all-purpose flour and a pinch of salt until just combined. Do not overmix.

Baking

  1. 7

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

  2. 8

    Bake

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the centers are still soft.

  3. 9

    Cool and Serve

Let the cakes cool for 1 minute, then carefully invert each ramekin onto a plate. Dust with powdered sugar and serve warm with a scoop of vanilla ice cream.
