Cake Base

Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 200°C (400°F) to ensure it reaches the right temperature for baking.

  2. 2

    Prepare the Ramekins

Grease four ramekins with butter and dust with flour to prevent sticking. Tap out any excess flour.

Making the Cake

  1. 3

    Melt Chocolate and Butter

In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a pot of simmering water or in the microwave at short intervals, stirring until smooth.

  2. 4

    Mix Sugar and Eggs

In a separate bowl, whisk together the granulated sugar and eggs until the mixture is pale and slightly thickened.

  3. 5

    Combine Mixtures

Slowly pour the melted chocolate and butter mixture into the egg and sugar mixture while whisking continuously to prevent the eggs from cooking.

  4. 6

    Add Dry Ingredients

Sift the all-purpose flour and salt into the chocolate mixture. Add the vanilla extract and gently fold with a spatula until just combined—do not overmix.

Baking

  1. 7

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

  2. 8

    Bake

Place the ramekins in the preheated oven and bake for 10-12 minutes, or until the edges are firm but the center is soft.

Serving

  1. 9

    Cool and Serve

Remove the fondants from the oven and let them sit for 1-2 minutes. Carefully invert each ramekin onto a plate and gently tap to release the fondant. Serve immediately, optionally with a dusting of powdered sugar or a scoop of ice cream.
