Preheat and prep
Preheat oven to 425°F (220°C). Line a baking sheet with parchment.

Prepare potatoes
Wash and scrub Russet potatoes. Cut into evenly sized fries about 1/4 inch thick (approximately 2 lb total). If desired, peel first.

Soak and dry
Soak cut fries in cold water for 20-30 minutes to remove excess starch. Drain well and pat completely dry with clean towels.

Season the fries
In a large bowl, toss the fries with olive oil (2 tbsp), salt (1 tsp), pepper (0.5 tsp), and garlic powder (0.5 tsp) until evenly coated. Spread fries in a single layer on the prepared baking sheet.

Roast to crisp
Roast in the preheated oven for 25-30 minutes, flipping once halfway, until edges are golden and fries are crisp.

Finish with truffle and cheese
Remove from oven. Drizzle white truffle oil (1.5 tbsp) over the hot fries and sprinkle grated Parmesan cheese (0.25 cups). Toss gently to coat and return to the oven for 3-5 minutes until cheese melts.

Garnish and serve
Remove from oven. Scatter chopped fresh chives (2 tbsp) and parsley (1 tbsp). Taste and adjust salt if needed. Serve immediately.
