Rose Frico Preparation and Shaping

Prep and heat
Preheat oven to 190°C (375°F). Line a sheet pan with parchment paper.

Mix cheese and seasonings
In a bowl, combine Parmigiano-Reggiano and Pecorino Romano until well distributed. Add cracked black pepper. If using, fold in crushed edible rose petals.

Prepare the molds
Place the silicone rose-shaped mold on the lined sheet pan. If your mold requires it, lightly mist the inside with a neutral oil to promote easy unmolding.

Fill molds
Spoon a heaping teaspoon of the cheese mixture into each rose mold. Press firmly to compact into a petal-like disk that fills the mold.

Bake until set
Bake on the sheet pan in the preheated oven for 6–8 minutes, until the edges are golden and centers are set.

Unmold and cool
Carefully remove the rose frico from the mold while still warm. Transfer to a rack and let cool completely until crisp.
