    Gather and measure all ingredients; set them near the stove and prepare the skillet for cooking.

Cook aromatics

    Sauté onions

    Heat olive oil in a skillet over medium heat. Add the finely chopped onion and cook until translucent, about 3-4 minutes.

    Add garlic

    Add minced garlic and cook for about 30 seconds until fragrant, stirring constantly to avoid burning.

Cook mushrooms

    Sauté mushrooms

    Stir in the sliced cremini mushrooms. Cook until they release their moisture and begin to brown, about 6-8 minutes.

Deglaze and simmer

    Add liquids

    Pour in vegetable broth and tamari (soy sauce). Stir to combine and scrape up any browned bits from the pan. Simmer until most of the liquid evaporates and mushrooms are tender, about 4-6 minutes.

Finish and season

    Stir in dried thyme, black pepper, and salt. Add nutritional yeast and stir to coat. Remove from heat. If using, sprinkle parsley over the top.
