    Prepare the herb and aroma mix

    Mince garlic; finely chop parsley, rosemary, and thyme. Measure out salt and pepper for the beef mixture.

    Make the beef mixture

    In a large bowl, gently combine ground beef with minced garlic, parsley, rosemary, thyme, salt, pepper, egg, and breadcrumbs until just combined. Avoid overworking the meat.

    Form patties

    Divide the mixture into 4 equal portions and shape each into a patty about 3/4 inch thick, pressing a shallow indent in the center of each to prevent bulging.

    Prepare cooking surface

    Preheat a grill or skillet over medium-high heat and lightly brush with olive oil.

    Cook patties and melt mozzarella

    Cook patties 4-5 minutes per side for medium doneness. In the last minute, top each patty with a slice of fresh mozzarella to melt.

    Toast buns

    Split the brioche buns and lightly toast them on the grill or in a separate pan with a touch of olive oil until golden.

    Assemble burgers

    Spread arugula on the bottom buns, add tomato slices, place mozzarella-topped patties on top, and cap with the top buns.

Tuscan Potatoes

    Preheat and prep potatoes

    Preheat oven to 425°F (220°C). Rinse potatoes and cut larger pieces into even wedges if needed.

    Season potatoes

    In a large bowl, toss potatoes with olive oil, minced garlic, rosemary, thyme, salt, and pepper until evenly coated.

    Roast

    Spread potatoes in a single layer on a baking sheet. Roast for 25-30 minutes, flipping halfway, until edges are crisp and centers are tender.

    Finish and garnish

    Remove from oven, sprinkle with chopped parsley and grated Parmesan. Adjust seasoning if needed.
