Assembly and toasting

    Preheat a skillet over medium heat and toast the pain levain slices until golden on both sides, about 2-3 minutes per side.

    Brush each toast with a light drizzle of extra virgin olive oil and season with a pinch of sea salt.

    Slice burrata cheese into portions and set aside to slightly warm while assembling.

Mushrooms and leeks

    Clean the mushrooms with a damp cloth and slice. Clean and finely slice the leek.

    In a skillet, heat 1 tablespoon olive oil over medium heat. Sauté the leeks until translucent, about 2 minutes. Add garlic and mushrooms; cook until mushrooms are browned and tender. Season with salt and pepper to taste.

Mustard pesto

    In a small bowl, combine parsley, Dijon mustard, and lemon juice with a pinch of salt.

    Whisk in olive oil gradually until pesto is loose and emulsified. Adjust salt and pepper to taste.

Tomatoes and finish

    Slice tomatoes into rounds.

    To assemble, spread a thin layer of mustard pesto on each toast. Place burrata on top, then arrange sautéed mushrooms and leeks around. Add tomato slices on the side, drizzle with remaining olive oil, and finish with a light sprinkle of salt. Garnish with fresh basil if desired.
