    Make the Crepe Batter

    In a mixing bowl, whisk together the flour, milk, eggs, and melted butter until smooth. Let the batter rest for 30 minutes.

    Cook the Crepes

    Heat a non-stick skillet over medium heat and lightly grease with butter. Pour a ladle of batter into the skillet, swirling to coat the bottom evenly. Cook for about 2 minutes on one side until golden, then flip and cook for another 1-2 minutes. Repeat with the remaining batter.

    Prepare the Filling

    Chop the kalamata olives and tomato. In a bowl, combine the feta cheese, olives, mixed greens, and diced tomato.

    Assemble the Crepes

    Place a crepe on a plate, spoon the filling mixture onto one half of the crepe, then fold it over. Drizzle with balsamic reduction.

    Optional Protein

    If desired, add grilled chicken, fried chicken, or steak on top of the crepe before drizzling with balsamic reduction.
