    Prepare the Vegetables

    Slice the zucchini, eggplant, summer squash, and portobello mushrooms into thin strips. Set aside.

    Roast the Tomatoes

    If you haven't prepared roasted tomatoes, preheat the oven to 400°F (200°C), slice the tomatoes in half, drizzle with olive oil, sprinkle with salt and pepper, and roast for about 20 minutes until soft.

    Grill the Vegetables

    Heat a grill pan over medium heat. Drizzle olive oil over the zucchini, eggplant, summer squash, and portobello mushrooms. Season with salt and pepper. Grill the vegetables for about 3-4 minutes on each side until tender and grill marks appear.

    Assemble the Panini

    Spread a layer of homemade hummus on one side of each slice of ciabatta bread. Layer the grilled vegetables and roasted tomatoes on one slice and top with the other slice of bread, hummus side down.

    Grill the Panini

    Heat the grill pan again or use a panini press. Grill the assembled sandwich for about 3-4 minutes on each side until golden brown and crispy.

    Remove the panini from the heat, slice in half, and serve warm.
