Dry Ingredients

Method

Preparation

  1. 1

    Activate the Yeast

In a small bowl, mix warm water (1 cup) with yeast and sugar. Let it sit for about 10 minutes until frothy.

  2. 2

    Mix Dry Ingredients

In a large mixing bowl, combine the flour, salt, and baking soda.

  3. 3

    Combine Wet and Dry Ingredients

Add the activated yeast mixture to the dry ingredients. Mix until a dough forms.

  4. 4

    Knead the Dough

Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth.

  5. 5

    First Rise

Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

  6. 6

    Shape the Muffins

Punch down the dough and turn it out onto a floured surface. Roll it out to about 1/2 inch thickness and cut out rounds using a biscuit cutter.

  7. 7

    Second Rise

Place the cut rounds onto a baking sheet dusted with cornmeal. Cover and let them rise for about 30 minutes.

  8. 8

    Cook the Muffins

Preheat a skillet or griddle over medium heat. Cook the muffins for about 7-10 minutes per side until they're golden brown and cooked through.

  9. 9

    Cool and Serve

Remove muffins from the skillet and let cool on a wire rack. Split and toast for serving.
