Make the Panini Bread

Prepare the Dough
In a large bowl, dissolve the sugar and yeast in warm water. Let it sit for about 5-10 minutes until frothy. Gradually add the flour, salt, and olive oil, mixing until a dough forms.

Knead and Rise
Knead the dough on a floured surface for about 10 minutes until smooth. Place in an oiled bowl, cover, and let rise in a warm area for 1 hour or until doubled in size.

Shape and Bake
Preheat the oven to 375°F (190°C). Punch down the dough, shape it into a loaf, and place it in a greased loaf pan. Bake for 25-30 minutes or until golden brown. Let it cool before slicing.
Make the Hollandaise Sauce

Whisk Egg Yolks
In a heatproof bowl, whisk together egg yolks and lemon juice until pale and thick.

Place the bowl over a pot of simmering water (double boiler). Gradually add melted butter while whisking continuously until the sauce thickens. Season with salt and cayenne pepper.

Crack each egg into a small bowl, then gently slide it into the simmering water. Poach for about 3-4 minutes for runny yolks. Remove with a slotted spoon.
