Prepare the Dough
In a small bowl, dissolve the yeast and sugar in warm water. Let it sit for about 5-10 minutes until frothy. In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture. Stir until a rough dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic. Place it in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shape the Bagels
Once risen, punch down the dough and divide it into 8 equal pieces. Shape each piece into a ball, then poke a hole in the center and stretch it to form a bagel shape.

Bake the Bagels
Preheat the oven to 425°F (220°C). Place boiled bagels on a baking sheet lined with parchment paper. Brush the tops with the egg wash and sprinkle with toppings of your choice. Bake for 20-25 minutes or until golden brown.
