Make the Crepe Batter
In a mixing bowl, whisk together flour, milk, eggs, vanilla extract, and salt until smooth. Let the batter rest for 30 minutes.

Cook the Apples
In a skillet, melt 1 tablespoon of butter over medium heat. Add sliced apples, brown sugar, and cinnamon. Cook until apples are soft and caramelized, about 5-7 minutes. Remove from heat.

Cook the Crepes
In the same skillet, add 1 tablespoon of butter. Pour in about 1/4 cup of crepe batter, swirling the pan to spread it evenly. Cook for about 1-2 minutes until edges lift and the bottom is lightly golden. Flip and cook for another minute. Repeat with remaining batter.

Assemble the Crepes
Place a crepe on a plate, spread a layer of mascarpone cheese, add a generous amount of caramelized apples, and fold the crepe. Drizzle with caramel sauce before serving.
