Prepare the Potatoes

Wash, peel, and cut the russet potatoes into thin strips. Soak the fries in cold water for at least 30 minutes.

Heat the Oil

In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes

Drain the fries from the water and pat them dry. Fry the potatoes in batches until golden brown, about 5-7 minutes per batch. Remove from oil and drain on paper towels.

Season the Fries

For Cajun fries, toss hot fries with Cajun seasoning. For Garlic Parmesan fries, toss hot fries with garlic powder, grated Parmesan cheese, chopped parsley, and black pepper.

Serve

Serve the fries hot with your choice of dipping sauce.
