Prepare the Pork
Heat olive oil in a large skillet over medium-high heat. Season the pork shoulder with salt and pepper, then sear on all sides until browned. Remove from skillet and set aside.

Slow Cook the Pork
In a slow cooker, add chopped onion and minced garlic. Place the seared pork on top, then pour in chicken broth and BBQ sauce. Cover and cook on low for 8 hours or until pork is tender and easily shredded.

Prepare the Tacos
Once the pork is cooked, shred it with two forks. Warm the corn tortillas on a grill or in a skillet. Assemble the tacos by adding shredded pork, lettuce, diced tomatoes, shredded cheese, and sliced onions.

Serve
Serve the tacos with slaw on the side, along with tortilla chips and salsa.
