Prepare the Pork
In a large skillet, heat olive oil over medium-high heat. Season the pork shoulder with salt and black pepper, then sear on all sides until browned, about 3-4 minutes per side. Transfer to a slow cooker.
Make the BBQ Sauce
In the same skillet, add chopped onion and minced garlic, cooking until softened, about 3-5 minutes. Stir in chipotle peppers, brown sugar, apple cider vinegar, ketchup, smoked paprika, and bay leaves. Bring to a simmer.
Combine and Cook
Pour the BBQ sauce over the pork in the slow cooker. Cover and cook on low for 8 hours or high for 4 hours, until the pork is tender and easily shredded.
Shred the Pork
Remove pork from the slow cooker and shred it with two forks. Return the shredded pork to the cooker and mix it with the sauce.
Serve
Serve the pulled pork on buns with slaw and pickles on the side.
