Make the Dressing

In a bowl, combine mayonnaise, ketchup, red chile powder, apple cider vinegar, salt, and pepper. Mix well and set aside.

Cook the Onions

In a skillet over medium heat, add a little oil and sauté the sliced onion until golden brown and soft, about 5-7 minutes.

Assemble the Sandwich

On one slice of rye bread, layer pastrami, Swiss cheese, sautéed onions, green chile, and sauerkraut. Spread a generous amount of the red chile thousand-island dressing on another slice of rye bread and place it on top.

Grill the Sandwich

Heat a skillet or griddle over medium heat. Butter the outside of the sandwich and grill until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.

Serve

Remove the sandwich from the skillet, slice in half and serve with extra dressing on the side.
